Like the other two books in this series, there are some amazing ideas in the book. There are few dishes that I would want to make whole cloth, but there are dozens of components that I could see making and using in various other ways. The one negative of the book, like the two previous volumes, is that there's an assumption that readers a) have a solid knowledge of fairly obscure ingredients that aren't explained well and b) have access to some pretty pricey scientific equipment. There are also whole processes simply skipped in the explanations of how to prepare dishes, leaving one to figure it out on their own.
