If you are a novice chef and want delicious yet easy dishes, then look no further than this cookbook.
I love to cook and will dive into a complicated recipe, but sometimes you just want something simple or easy to make. This cookbook is packed with recipes from appetizers to entrees to drinks and dessert and everything in between.
I made two of the recipes today - the Quick Chicken Saltimbocca and the No Bake Peanut Butter Cheesecake. Both turned out great even though I left out the whipped topping in the cheesecake. No problem, we put it on top but putting it in would have made it lighter and fluffier.

So you all know how much I love a new cookbook. This one I had pre-ordered and waited not so patiently for. I love love love Katie Lee. She's honestly a breath of fresh air and you can't not love her. I love that the title of this book came as a spin on her favorite movie "It's Complicated" (if you haven't seen it you're seriously missing out) I love the photos, the recipes, the stories behind the recipes, the stories of some of the recipes she she made for her first dates with her now husband Ryan....oh and of course the photos of her little pup Gus. I've already made three recipes. This may be the book where I make all the recipes listed in a year. Stay tuned....

It's not complicated but it is pricey, sometimes downright expensive.
I made note of a few recipes to try, mainly made of things I already have on hand or can get without trouble.
Mostly, though, this is one of those dream cookbooks full of food that looks delicious but that I will never make, myself. -
Easily my favorite new cookbook of 2021 so far. I've cooked close to a dozen recipes from this book so far and they've all been fantastic. These are everyday simple recipes, but super delicious and impressive enough to serve at gatherings.
So far, I have made the breakfast nachos, broccoli au gratin, white chicken chili, beef stroganoff, cannoli trifle and chocolate croissant bread pudding. My husband has already requested that I make the bread pudding again "every year on his birthday". :)

Overall an alright cookbook for someone not used to cooking. Coulda been great I suppose. There are unfinished recipes throughout the book. Most notably with the “Creamy Spinach Artichoke Pasta.”
The recipe begins and ends with cooking and draining pasta. Nothing else.
There are plenty of other cookbooks that are just as accessible for a novice learner but better executed. -
Great cookbook for new cooks
None of these recipes are complicated, but each of them are full of tasty ingredients and smart techniques. Katie has made cooking that much more approachable. Know someone moving out on their own or who wants to increase their skills? Start them with this book. Good for home chefs and beginners alike. -

I now prefer small, quiet, simple dinners, with just a few people to the big parties that I used to host. Good food, and being able to relax while I eat it, is so much more important than acting as a high-end server to a house full of family and friends. That’s why I love her latest book, It’s Not Complicated: Simple Recipes for Every Day.
There are four things I look for in a good cookbook. First of all, I want a lot of good, easy to prepare recipes. Second, I want beautiful photographs of nearly all of the dishes in the cookbook to use as both guide and inspiration. Third, I want a wide variety of recipes to suit a multitude of tastes. Lastly, I want recipes written in a clear and concise fashion using ingredients that I’m not going to have to run out and buy in some obscure specialty shop. This book fits these criteria. It is, in a word, wonderful. It is loaded with delicious, but simple dishes that will be sure to please every member of your family. In addition to being family friendly, a good many of them are company worthy as well, and who doesn’t love that?
The photos are mouthwatering, and there is a wonderful variety of recipes to suit all tastes and preferences. To my way of thinking, it is worth owning for the vegetable recipes alone. Think Crunchy Ranch Corn on the Cob, Soy and Lemon Roasted Broccoli, Fondant Potatoes, and more. Not a vegetable person? OK. How about the mouthwatering Animal-Style Burgers, Barbecue Potato Chip-Crusted Salmon, or Prime Rib with Beef Gravy, the latter far easier than you might think.
This is not to say that Biegel skimps on desserts; quite the contrary. Here you will find all forms of sweet deliciousness including Chocolate Croissant Bread Pudding, Pumpkin Cheesecake, Cannoli Trifle, and Mocha Swirl Ice Cream.

I follow Katie Lee Biegel’s Instagram feed and she truly brought me joy during this pandemic as she shared her little family with us. I bought this book as a way of thanking her for the smiles and didn’t anticipate enjoying her recipes as much as I did. I have made at least 3 recipes in each chapter before writing this review. There were no misses, though we do have favorites that I’ve made several times. In particular her mom’s granola I’ve already made 3 times. The roasted carrot and red leaf salad is another. Oh- and the red curry lentil and squash stew!!! I halved the recipe because there were only 2 of us at home that day and wish I hadn’t! None of the ingredients have been hard to find in our rural grocery store though I am salivating over the lobster Cobb- thank goodness for online ordering!
Well done Katie Lee Biegel! I will continue to cook through the rest of the recipes. -
The cooking times here are pretty accurate, and the recipes are straightforward and crowd friendly. I thought the strongest chapters were the salads (the shaved brussel sprout salad is great) and there were some creative ideas in here, like the salmon with BBQ potato chips. Worth checking out from the library, but I wouldn't use it often enough to buy it. There is also a fun cocktail section.

This is actually a good cookbook and Katie delivers by making many yummy sounding recipes which are, indeed, not complicated. Can’t wait to try some of them. -
Actually a beginners cookbook with twists that make the ordinary special. More cocktail recipes than a prefer, but maybe that just means I need to up my drinking game…..

There were a few recipes that I want to try, and the tips for hard boiling eggs were very helpful!
